Vietnamese Curry Chicken 越南咖喱雞 ( Viet Food 321 )

Hello everyone!

Today we will be making the delicious Vietnamese inspired Curry Chicken (越南咖喱雞)
This is one of my MUST ORDER dish when I go visit a Vietnamese Restaurant.

As you may notice later, the utensils and settings are a little different this week, why is that??
A couple friends and I went to visit another friend for a little weekend getaway.
We were all thinking of what we should eat for dinner, and Curry Chicken came into our mind.
And since many of you have requested for this recipe, WHY NOT?

After doing some research, I found out that there were many different ways of making this dish, so I decided to give it a try, using some of the ingredients that were available to me, in just a few simple steps!

They all loved it!!

Let me show you what it looks like when its done!! *drools*


WARNING: THIS DISH IS SUPER DELICIOUS, MAY ATTRACT HUNGRY NEIGHBORS! !


Let's get started by going over the ingredients:




3 - 4 lbs of chicken ( I used wings and drumsticks)
3 - 4 large potatoes
1 -2 large carrots
1 large onion
1/2 garlic
1 can of coconut milk
4 Tablespoons of garlic powder
 2 cups of water
1 table spoon of sugar 
1 stalk of long green onion
3 table spoons of salt ( you can use fish sauce of you have, but salt was all I had )


Make diagonal incisions on the chicken to help it absorb the seasoning better
Slice up 1/3 of the onions, gingers and garlics
Slather 2 table spoons of the garlic powder into the chicken
Add all the aromatics and mix well
Allow it to marinate for at least 30 minutes



Meanwhile, peel and chop up the carrots and the potatoes ^__^



Add 2 table spoons of oil into a pan on high heat
Let the sit in for 2 minutes on each side or until lightly browned
After 4 - 5 minutes, add in the aromatics and stir around for 1 minute
Take the chicken out and set aside
TIP: WHILE BROWNING THE CHICKEN, TRY WIPING OFF THE AROMATICS, AS THEY BURN FAIRLY QUICKLY!!


In the pot, add in rest of the aromatics, cook until soften
Add in the chicken


Add the coconut milk, water, garlic powder, sugar, salt
(ONCE AGAIN, PLEASE ADJUST THE SALT AND SUGAR TO YOUR LIKING!)
Then, carrots and potatoes.

When the curry starts boiling turn the heat down to medium, and cover the lid half way, and cook for one hour, stiring occasionally.

We are done!
It smells so amazing, so easy and most importantly, it was
SO DELICIOUS!
