Sponge Cake 海绵蛋糕 (Dessert 321)

Hello everyone!
Welcome to Easy Peasy!!!

Today we will be making ... SPONGE CAKE (海绵蛋糕)!!



This is one of my FAVORITE cakes of all time, its light and fluffy. Mmmmm~\(^▽^)/
Ever since I was a child, my favorite kind of birthday cake has been sponge cake with whipped cream!! <3
So many special memories!!
Due to the limitation of my oven situation, I am left to deal with a toaster master, so I had to use my cupcake molds instead.
You can use a 7 inch cake pan instead. 



Let's go over the ingredients so we can get this babe started!! 



3 Eggs 
1/2 Tablespoons of Sugar 
3/4 Tablespoons of  Cake Flour 
1 Teaspoon of Unsalted Butter 
1 Tablespoon of Milk


Before you start, pre-heat the oven to 320F


Crack 3 eggs and beat with electric mixer for 2 minutes.
Add all sugar and mix over hot water (This will help your egg mixture fluff up)
Continue mixing until it becomes white and fluffy.
Make sure the egg mixture are stiff enough to leave trace that does not disappear immediately.




microwave the unsalted butter and milk for 20 - 30 seconds.
Sift in the cake flour into the egg mixture and fold them 20 times carefully with a spatula
Add the milk and butter and vanilla extra (optional) and fold 50 more times or until smooth.





Spoon in the cake mixture into your mold or cake mold.
Pop them into your pre-heated oven for 23 minutes.
TIP: You can stick a bamboo stick or dry spaghetti into the cake, if it comes out with just a little bit of crumbs, then its ready, if it comes out clean, then it's been baked for too long.




When the cake is ready, take them out, keep them upside down on a cooling rack until cool.
When they are completely cooled, take them out of the mold.
THEY ARE BEAUTIFUL!
Because of the shape of my mold, I have decided to cut off the top and show the bottom.
(The bottom is a flower ^___^ )
Make some whipped cream if you are making a cake.
2 cups of heavy cream + 3 tbsp of sugar
Mix the whipped cream until stiff peak forms and STOP!
TIP: Make sure you DON'T over whip the whipped cream or it will be hard to decorate
