Snow Fungus with Papaya soup 雪耳/銀耳木瓜糖水 (Chinese Food 321)

I'm sorry about being MIA for the past 2 months, I was out of the country to visit my family in China, and since Google was not allowed in China, blogspot is also banned > <

Today, we will be making one of the most delicious sweet dessert soups of all the traditional Chinese dessert soups that can be served HOT & COLD! 
This dessert is called: Snow Fungus with Papaya soup (雪耳/銀耳木瓜糖水)

Let me begin by talking a little about the main star Snow Fungus:

Tremella fuciformis, also known as Snow fungus ( 雪耳 or 銀耳 in Chinese) is a very popular ingredient Chinese cuisine.  It is a species of fungus that has a gelatinous texture. In many Asian countries, it is believed to have anti aging, moisture locking and other health benefits.

SO REFRESHING! SO YUMMY!!


Let's get started!! (~ ^ 0 ^ ~)

For this recipe, you will need::




2 ears(?) of Snow Fungus
* I'm sorry, I have no idea what the measurement units are for snow fungus T___T *  
 Half of a Papaya 
1/4 Cup of Rock sugar
* Adjust the amount to taste!! *
A pinch of Salt 
Water 




First, rinse the snow fungus under running water to remove any unwanted objects.
Then soak in water for AT LEAST 30 minutes, or when it becomes soft to the touch.
* NOTE: The snow fungus will EXPAND in size!!





Peel and remove the seeds from the Papaya.
Cut them into chunks.
* TIP: It's super easy to remove the seeds if you scoop it out with a spoon ^_^






When snow fungus becomes soft, CAREFULLY (with love) wash them again, now they will be easier to handle, but careful not to break them.
Then, remove the stems from the snow fungus, and cut them into smaller pieces.
* TIP: It is easiest if you just cut around the ring of the stems. ^_^






Add the snow fungus and the papaya's into a medium or large pot.
Then just enough water so it will submerge the papayas and snow fungus. (As shown)
Turn on the stove on high, cook until fully boiled.






Turn the heat on medium low, simmer for at least 45 minutes with the lid crack open.
* The texture of the papayas and snow fungus will depend on how long you simmer it for, the longer you simmer, the softer it will be, vise versa.






When the fungus and papaya has reaches your desired texture, turn off the stove, add in the rock sugar to your desire sweetness.
Add a pinch of salt
Stir until all sugar are dissolved!
*PLEASE PLEASE PLEASE! TASTE THE SOUP AS YOU ADD THE SUGAR!! Depending on the sweetness of the papaya, your soup might not need as much rock sugar, vise versa!!
