Today we will be making a variation for the traditional Ramen: Stir Fried Instant Noodle (炒方便麵)
This was one of my favorite dishes when I was in High School and even when I was dorming.
It's super easy and quick to prepare, and somehow it makes me feel less guilty about eating so much Instant Noodles. ヽ(=^・ω・^=)丿
The beauty about this dish is you can pretty much add any ingredients that you have or like!
It is indeed the most personal and flexible dish ever!!
You can make it VEGAN, SEAFOOD, BEEF, CHICKEN, PORK, EGGS ... literally anything.
Keep in mind that these are just the ingredients that I happen to have on hand today, but I always try to add some vegetables and an egg in just to make it a more balanced meal. \(^▽^)/
Let's go over the ingredients so we can get started!
1 pack of instant noodles
1 Egg
1 Long green onions
(**Separate the white and green park as they will be used separately)

A little bit (about half a cup) of carrots slices
1/2 cup of pork diced
(**You can use ham, spam, sausages or hotdogs instead)

2 - 3 table spoons of sesame oil
(*vegetable, canola, corn and olive oil are fine too)

2 tablespoons of salt
1 tablespoon of white pepper powder
(you can use black pepper powder as well)

First thing, boil 4 cups of water in a small pot to cook the noodles.
While the water is boiling, crack and beat one egg in a bowl.
When the water starts to boil, add the instant noodles in. Use a chopstick to separate the noodles to help it cook more evenly.
Turn off the stove after 2-3 minutes.
Drain the noodles and run it under cold water until the noodles are no longer hot to prevent noodles from cooking any future by the remaining heat.
Leave the noodles in cold water for another 2-3 minutes, then drain and set aside.
TIPS:: Make sure you don't cook the noodles all the way through, and immediately after draining it run it through with COLD WATER!
THIS IS WHERE THE NOODLE GETS IT'S CHEWY TEXTURE!
Turn the stove on high, when the pan is hot, add in the oil.
When the oil is hot, add in the white part of the scallion and stir fry until aromatic.
After around 1 minute, add in the carrots, stir for another minute then add the pork.
After you add the pork, turn the stove down to medium high, and stir for 2 - 3 minutes to cook the pork thoroughly.
Now add the drained noodles and stir for a little and then add salt and pepper.
Last but not least, add the beaten eggs, and make sure the egg covers all the noodles.
** This is how I like my eggs, if you want, you can add the eggs before the veggies.
Stir around for another 2 - 3 minutes and tastes your noodles to see if you need anymore salt or pepper.
Last, add in the green part of the scallion, stir around for a little more.

It is incredibly easy and delicious.
